Heat 1 to 11⁄2 tablespoons of oil in a pan or kadai. Combine 1⁄4 and ½ teaspoon of mustard seeds and 1 broken red chilli. Fry them until golden. One can also add some basic lentils as it gives it a nutty taste and aroma. After that, add chopped beans, 1⁄2 tbsp turmeric and some salt. Stir-fry this for about 2 minutes. Once it is done, cover and cook for 2 minutes on low heat. After 2-3 minutes, open the lid to see whether any moisture has been released. Then, if the beans look dry, one can also add some extra water to give them moisture. After that, add some extra red chilli powder or sambar powder to make it spicier. Then, add the most important part of the poriyal, that is grated coconut. Stir and saute them well. Scrumptious Beans Poriyal is ready!
