A recent viral video has captured the attention of netizens by showcasing the meticulous and hygienic process of making paneer, or cottage cheese, at the Ananda Dairy factory in Uttar Pradesh. The video, posted on Instagram, has garnered 1.3 million views and highlights the impressive standards of hygiene and automation involved in the production of one of India’s most beloved dishes.
Paneer, a versatile ingredient high in protein, is a staple in many Indian households and is used in a variety of dishes from grilled skewers to rich gravies. The viral clip, which begins with the phrase “India’s hygienic paneer,” provides a step-by-step narration of the manufacturing process, ensuring viewers understand the care and precision involved.
The video starts by showing milk being emptied into a tank through pipes and heated to 80 degrees Celsius. A voiceover explains that the milk mould is first sanitised as part of the factory’s stringent hygiene practices. In this mould, two essential ingredients are added: milk and a coagulant. These are mixed thoroughly before being transferred to a paneer mould.
With the help of advanced machinery, the curdled milk is separated from the whey. The paneer mould is then moved to a pressing machine where pressure is applied to remove excess water and to shape the paneer into a slab. This slab is then immersed in a cold water bath for five to six hours, allowing it to set and cool down properly. Once set, the 8-kilogram slab is cut into smaller portions, such as 1 kilogram, 100 grams, and 200 grams.
The final stage of the process involves packaging the paneer. The slabs are packed in food-grade boxes using automatic machines, ensuring they remain untouched by human hands. Each package is then labelled with the brand’s name, ready for distribution.
