Open your iPhone's Watch app. Tap the Watch app icon, which resembles a white side profile of an Apple Watch on a black background.

Tap My Watch. It's in the bottom-left corner of the screen.

Scroll down and tap General. You'll find it near the middle of the page.

Tap Accessibility. It's at the bottom of the screen.

Scroll down and tap Accessibility Shortcut. This option is at the very bottom of the page.

Select an accessibility feature. By default, you'll see VoiceOver and Zoom here; tap one of them to set your Apple Watch's accessibility shortcut to link to it. Depending on your Apple Watch's enabled accessibility features, you may see more options here.

Enable and disable the accessibility feature. To turn on the selected accessibility feature, triple-press the Digital Crown on the right side of your Apple Watch's housing. You can then disable the feature by triple-pressing the Digital Crown again. You may have to re-enable the accessibility shortcut after updating your Apple Watch.
