Children usually do not like vegetables. It is extremely important for a parent to make sure that their child is adding nutritious vegetables in their diet. Ingredients:
2 cups of boiled rice
150 grams of cabbage
1 big onion
1 carrot
2 green chillies
1 red chilli
A pinch of turmeric powder
Half teaspoon of lemon juice
A bunch of curry leaves
Some coriander leaves
Quarter teaspoon of mustard seeds
One and half teaspoon of gram dal
One and a half teaspoon of urad dal
3 teaspoons of peanuts
5 to 6 cashew nuts
One and a half teaspoon of oil
Salt as per your taste
Directions to cook:
-Take a pan, pour some oil in it, and let it heat for some time on medium flame.
-When the oil is hot enough, add urad dal and mustard seeds to it. After the mustard starts to crackle, add peanuts, gram dal, cashew nuts and red chillies to it.
-After cooking the mix, it is time to add the chopped onions, green chillies and curry leaves. Make sure to saute the mixture well. When the onions turn golden brown, add the chopped carrot and saute it for a few more minutes. Then add the chopped cabbage and turmeric powder to the mix and cook for another 2 to 3 minutes.
-Finally, add the boiled rice to the vegetable mix, salt as per your preference and cook it on a low flame.
-Garnish the rice dish with finely chopped coriander leaves and curry leaves, and turn the stove off.
-Pour some lemon juice on the dish to give it a tangy taste. The delectable cabbage rice is ready.
