Ingredients Required:

Basmati rice- 1 cup

Chopped vegetables (beans, carrots, peas, corn, potatoes)- 1 cup

Onions – 2 finely sliced

Garlic – 2 cloves, chopped

Ginger – 1-inch grated ginger

Ghee or oil

Cumin – 1/2 tsp

Cloves – 2

Cardamom – 2

Salt – as per taste

Water -2 cups

Chopped coriander leaves (for garnishing)

Method of preparation:

First, wash the basmati rice thoroughly and let it soak in water for twenty to thirty minutes.

Then, put a pan over medium heat and add oil or ghee as per your preference. Add cumin seeds, cloves, and cardamom to it.

Add the finely chopped onion, ginger, and garlic to it after a few seconds, and watch for the onion to turn golden brown.

Add the veggies of your choice (corn, peas, carrots, beans, potatoes, and cauliflower) and season them with salt after the onions have sautéed nicely.

Fry for a few minutes, and when all the veggies are well sautéed, add the soaked rice to the pan.

Finally, pour in the necessary amount of water, cover the lid of the pan, and allow it to simmer thoroughly.

Once the rice turns soft, pour in more ghee for added flavour.
