How to Make Roasted Potatoes in the Microwave
There are various ways to "roast" potatoes in the microwave. Since the microwave speeds up the whole roasting process, this can save you time, energy and money. In this tutorial you'll find several different approaches to roasting the potatoes, including microwave-only, finishing in the pan or finishing in the oven.
Ingredients

Microwave roasted potatoes

Prepare the potatoes. Cut into cubes all of the same size.

Place the cubes into a microwave-safe dish. They can also be placed inside a steamer bag suitable for microwaving.

Drizzle the oil over the potato cubes. Season to taste with salt and pepper. If you're using another seasoning, add this as well. Finally, add the herb of choice.

Cover the dish tightly. Use either a lid or microwave-approved plastic wrap.

Place in the microwave. Cook on high for 10 minutes. This time may vary according to your microwave, so check now and then.

When done, remove the roasted potato cubes from the microwave oven. Wear oven mitts or gloves to handle the hot dish.

Open the plastic or lid with care. There will be a lot of steam, so stand back to allow it to escape.

Serve the potatoes with the rest of the prepared food.

Stove-top roasted potatoes

Peel the potatoes. Then cut them in half lengthways.

Place the potatoes flat side onto a large plate. The plate must be microwave-safe.

Put the prepared potatoes into the microwave oven. Cook for about 10 minutes or until a knife can be inserted into the potato and it feels soft.

Cover the dish tightly. Use either a lid or microwave-approved plastic wrap.

Pour oil into a saucepan. Heat on high until the oil is hot.

Sprinkle the microwaved potatoes with salt.

Carefully lower the potatoes into the hot oil using a slotted spoon or tongs. Cook them until they brown.

Retrieve from the oil when browned. This will take less than 5 minutes. They're now ready to serve.

Oven roasted potatoes

Select as many potatoes as you wish to serve. They must be in good condition and either medium to large in size.

Scrub the potatoes to make sure they're clean. Pierce with a fork a few times per potato, to allow steam to escape during cooking.

Place the cleaned potatoes on a microwave-proof plate. Place in the microwave and cook on high for 7 to 8 minutes. During this time, turn the potatoes at least once.

Wearing oven mitts or gloves, remove from the microwave. Allow to cool slightly, then cut the potatoes in half. Hold with a fork if they're too hot to handle safely. While the potatoes are cooling slightly, preheat the oven to 375ºF/190ºC.

Create cubes without cutting through the skin. Using a kitchen knife, score down the middle (length) of the potato half, then score across the width at even intervals to create cube shapes that sit in the skin. Do not cut the potato flesh away from the skin, and do not cut the skin; you are aiming to keep all of the flesh cubes intact, inside the skin shell.

Repeat for each potato half you're roasting. Place the scored potato halves side by side on a baking sheet (add parchment paper first, if wished).

Make the roasting baste. In a small saucepan, melt the stick of butter. Add the garlic powder and lemon juice. Stir to combine well.

Brush the basting mixture over the tops of the scored potato halves. Sprinkle with salt and pepper. If you wish to use additional seasonings, such as herbs, chicken seasoning, etc., sprinkle this over the top after basting.

Place the prepared potato halves into the oven. Bake for about 10 minutes or until the topping of the potatoes has turned a golden brown and looks nice.

Sprinkle the Parmesan cheese over the top of the cooked potato halves. Turn on the broiler (top-down grill) and broil (grill) for just long enough for the Parmesan to brown.

Serve immediately.
