Classic Mulled Wine
Ingredients:
• Merlot
• Vodka / Brandy (Optional)
• 5 Cloves
• 3 Black Cardamom
• 3 Star Anise
• 2 Cinnamon
• Nutmeg
• Dehydrated Ginger
• 5-6 Black Pepper
• 1 Bar Spoon Honey
Preparation:
• In a vacuum sealed bag put all the spices and wine except the brandy and honey and seal the bag.
• Put in a sous vide at 65 degree Celsius for about 3 hours.
• Once ready, pour some honey in a wine glass along with some grated nutmeg and pour the wine in it.
• To add a hit of alcohol, pour in 20ml vodka or brandy.
• Garnish with an orange slice and star anise
The Kashmiri Mulled Wine
Ingredients:
• Merlot Wine
• 30ml Vodka / Brandy (Optional)
• 100-150ml Saffron Infuse Water
• 5cloves
• 10gm Crushed Almonds
• 3tbsp Dried Rose Petals
• 2 Sticks Cinnamon
• 2-3 White Pepper
• 2-3star Anise
• 4-6 Saffron Strands
• 5gms Fenugreek
• 3 Green Cardamom
• 1 Orange Peel
• 1 Bar Spoon Saffron Honey
Preparation:
• In a pot infuse 2-3 strand of saffron in 150ml hot water then in a vacuum bag add the water and rest of ingredients expect honey and brandy/vodka
• Seal the bag and sous vide it for 3.5 hours at a temp of 68 degree Celsius
• Once ready pour some saffron honey in a wine glass and pour the wine in glass and
• Add vodka or brandy if needed
• Garnish with orange slice and star anise in gold varq
The Fruity Mulled Wine
Ingredients:
• Merlot Wine
• 30mlvodka / Brandy (Optional)
• 2 Orange Peels
• 2 Lemon Peels
• 4-5 Slices Dehydrated Apples (Green)
• 2-3 Slices Fresh Red Apples
• 5-6 Chopped Blueberry
• 4-5 Cloves
• Grated Nutmeg
• 3 Green Cardamom
• 1 Bar Spoon Date Honey
• 2 Black Cardamom
Preparation
• In a vacuum bag add the water and rest of ingredients expect honey
• Add brandy/vodka and seal the bag and sous vide it for 3.5 hours at a temp of 68 degree Celsius
• Once ready pour some date honey in a wine glass and pour the wine in glass
• Add vodka or brandy if needed
• Garnish with orange slice and lemon slice
